Almond & Date Bars

I've had a love affair with granola bars every since I was little, I would happily eat anything that had nuts in it, particularly almonds and peanuts. Nutty chocolate bars, cookies with nuts, nuts and raisins, you name it. When I had to eliminate gluten, dairy and sugar from my diet, I struggled with breakfast options. I thought if you had to make vegan, gluten free, dairy free and sugar free foods, it must be so bland and tasteless. Thats what anyone would think when they are new to eating a certain way! But boy was I wrong. I started off by trying out different recipes for granola bars. Some turned out not so nice but with trial and error, it's safe to say this remains to be one of my favourite breakfast recipes. It is easy to make, it doesn't require too many complicated ingredients and it has nuts, dates and oats - few of my favourite foods. The bars have a nice crunch from the almonds, a earthy texture from the oats with overtones of cinnamon in each bite and the granola bars are so well held together by dates which also gives it a natural sweetness.


  • 2 cups gluten free oats
  • 2 tbsp chia seeds soaked in 10 tbsp water
  • 1 cup almonds
  • 1 cup dates
  • 3 tbsp coconut oil
  • 1 tbsp almond butter
  • 2 tbsp maple syrup
  • 1/3 almond milk
  • 1 tsp cinnamon powder

Preheat your oven to 200C and line a medium sized baking tray with baking paper.
Soak the chia seeds with water and set aside until it forms a gel. This will take around 5-10 mins.
In a food processor, put the dates, almond milk, almond butter and maple syrup and blend until a paste forms.
In a large bowl, mix oats, chia seeds, the date mixture and all other ingredients and mix well with a spoon or mix with hand.
Pour your granola mixture into the baking tray and spread evenly.
Bake for 25 mins.
Allow to cool for about 15-20 mins before cutting into desired shapes and enjoy x.

If you find your date mixture difficult to blend, you can add some water so that it mixes well.
