Blood Orange Upsidedown Cake

  • 1.5 cups ground almonds
  • 3/4 cup oat flour
  • 1/3 cup coconut sugar
  • 1/2 cup coconut milk
  • 1/3 cup maple syrup
  • 4 tbsp coconut oil
  • Juice of 1 blood orange (1/3 cup)
  • 1/4 cup almond butter
  • Pinch of salt
  • Thinly sliced blood orange

Start by grounding the almonds in a food processor. Once the almonds turn into a powder, add the oat flour, baking powder, salt and mix well. Then add all the wet ingredients and keep mixing until the mixture turns into a batter.
Preheat the oven to 180C. Grease and line a round cake tin with baking paper. Line the base with thinly sliced blood oranges and pour the cake batter over them. Even out the top and place in the oven to bake for 25-30 minutes. Make sure the centre is cooked well.
Allow the cake to cool and remove from the cake tin. Once completely cool, flip the cake upside down and you can top the cake with additional sliced blood oranges (this is optional) .
