These cupcakes came about as a total mistake. I was trying a new recipe for Red Velvet Cupcakes and I used beetroot to give the natural red color, however I couldn’t achieve the color I was looking for and instead made Chocolate Fudge Cupcakes. It got the “fudge” name after I tried them. They are so incredibly moist and fudgy, its almost like a cross between a brownie and a cupcake. They taste amazing on its own, but I had already made cream cheese frosting for the original Red Velvet Cupcakes, so I smeared the frosting on and it tasted just as good! Enjoy baking x
In a food processor, mix the dates and all the wet ingredients until you get a creamy date paste.
Gradually add the ground almonds and cacao powder and lastly the flax eggs.
Mix well until you get a thick paste. You can try the batter, if you prefer it to be sweeter, you can add more maple syrup or honey.
Pour your cake batter into a muffin tray lined with cupcake holders. Half fill each cupcake as the batter will rise a little.
Bake at 180C for 30 mins in a preheated oven.
While your cupcakes are baking, you can make the frosting by adding all the ingredients in a food processor and mix for about 5-7 mins, stopping every few minutes to scrap down any mixture that has come up on the sides. Mix until you get a nice thick creamy frosting.
Pour this into a icing tube or if you don’t have one, you can just pour it into a bowl and refrigerate for about 30 mins – 1 hour so the mixture thickens and sets, otherwise it will be too running to use as a frosting.
Once the cupcakes are cooked, let them cool before icing it with the frosting.
