Porridge Oats

I love to start my day with a leisurely breakfast and I always struggle to find different vegan options for breakfast. I am a huge fan of porridge oats, especially when the weather is a bit chilly...it puts you right into your comfort zone. Second reason why I like porridge oats is you can top it with pretty much any fruit. This one is my fav combo as you get a nice crunch from the pomegranate seeds and a mushy texture from the oats.

Ingredients for the Porridge

  • 1/2 cup gluten free oats
  • 1 cup almond milk
  • 2-3 tbsp maple syrup
  • Pinch of cinnamon
  • Pomegranate seeds
  • Handful of Raspberries
  • White Choco Chips

Place a small saucepan on medium heat and pour the milk and oats and allow it to cook and simmer for about 5 minutes. If you feel the mixture is too thick and it needs more milk, go ahead and add more milk.
Keep stirring while it cooks. Once the oats are cooked, pour it into a bowl and add maple syrup and cinnamon and mix well.
Top with raspberries, pomegranate seeds and white choice chips. .

You can top it with any other fruit of your choice. Bananas and shredded apple goes really well with the combo of porridge and cinnamon as well.
