I’m not a big fan of chocolate bars but if there was any one chocolate that would tempt me it would be Snickers, maybe its the peanut element in it with the sticky toffee nougat or the luscious layer of chocolate coating on top? Perhaps all of the above. When I first made a healthier version of Snickers, it tasted so good, even better than the original, I knew this would be a big hit. It is quite addictive, you can’t stop eating it once you’ve made it. Its so easy to make, I now take it with me when I’m invited to friends dinner parties and its very much enjoyed by even the not health conscious lot.
In a food processor, mix the dates, cacao powder, coconut oil, coconut cream, peanut butter and vanilla powder until the mixture becomes creamy and smooth.
Then add the peanuts and pulse it a few times so that the peanuts remain chunky.
Line a baking tray (I use a 21 x 21cm) with baking paper, put the mixture in the tray and even it out with the back of a spoon.
Freeze the mixture for about 2-3 hours.
While the mixture is in the freezer, start making the chocolate layer by mixing all the ingredients and mix well with a whisk until a smooth chocolaty topping forms.
Spread the chocolate on top of your mixture and top with crushed nuts.
Leave the Snickers tray in the freezer for a further hour so that the chocolate sets.
Cut, serve and enjoy x

The longer you leave the Snickers tray in the freezer, the better it will set, so when you cut it, it doesn’t fall apart. I usually leave mine overnight.
